Menu Monday (and a delicious pizza recipe)

It was so good, and it just lent credence to my theory that the best type of pizza has the strangest toppings. I'd choose shrimp and artichoke -- or any other unorthodox combination -- over pepperoni any day. I plan on heading back to Sam's for another slice of pizza whenever I can, but until then, I had to figure out a way to satisfy my craving and make a similar pizza at home.

Shrimp & Artichoke Pizza
This pizza would be great with crab, too.

8 ounces shrimp, peeled and deveined
1 tablespoon butter
1 teaspoon garlic, minced
8 ounces mozzarella cheese
2 tablespoons fresh oregano, chopped
1 batch pizza dough (I like to use dough from Trader Joe's for 99 cents)
Extra Virgin Olive Oil
Salt and pepper to taste

Melt the butter in a small saute pan over high heat. Add the shrimp, garlic, and salt and cook until the shrimp starts to turn pink, then remove from heat.

Place the dough on a floured surface and shape it into a 14-inch round pie. Transfer it to a floured pizza stone or round pan. Add the toppings, first a drizzle of olive oil, then the shrimp and artichokes, then the cheese, and then the oregano, leaving a half-inch border around the edge.

Bake at 450 degrees (or as high as your oven will heat) until the crust is browned and the cheese is bubbling.

As for the rest of the week, I have a pretty solid dinner plan.

Monday: Baked Ravioli and roasted vegetables
This is a new recipe, and I've been daydreaming about it all day.

Tuesday: Meatball Subs with Caramelized Onions, Sweet Potato Fries, Salad
