Creamy Shiitake and Leek Chicken

1 pound chicken pieces
2 tablespoons olive oil
1 pound leeks, sliced
2 tablespoons all-purpose flour
1 package shiitake mushrooms, sliced
1.5 cups chicken broth
2 tablespoons soy sauce
1 cup heavy cream
Pepper, to taste

Preheat the oven to 400 degrees.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and brown on both sides, then remove to a casserole dish.

Add the leeks and mushrooms and sauté for 5 minutes. Add the flour and mix with the vegetables. Pour in the chicken broth, soy sauce, cream, and pepper, and stir to combine. Bring the sauce to a boil, and then pour it over the chicken pieces in the casserole dish.

Transfer the casserole dish to the oven and bake for 25 minutes, until the chicken is cooked through and the sauce is bubbly. Serve immediately with crusty bread and a side of vegetables.
