Deconstructed Chips and Salsa

A fun (and portion-controlled) way to serve a traditional Mexican appetizer.

8 ounces cherry tomatoes, halved
1 red onion, diced1 jalapeno, seeds and ribs removed, diced
1 avocado, diced1 bunch cilantro
2 tablespoons olive oil
1 lime
1 package scoop-style tortilla chips

Combine the tomatoes, onion, jalapeno, avocado and cilantro in a small bowl with the olive oil and juice of the lime.

Evenly space the chips out on a platter. Fill each “bowl” of the chip with one tablespoon of fresh salsa. Season to taste with salt and pepper.
