Gluten Free Chocolate Chip Peanut Butter Cookies

I started complaining that sandwiches had "too much bread," and that I wouldn't drink beer because it made me feel more bloated than that marshmallow guy at the end of the first Ghost Busters movie.

You can't really get away from gluten when you are searching for a sweet treat, though. Cookies, cakes, muffins, they all seem to have copious amounts of wheat in them. You start turning down offers of your friend's "World's Best Chocolate Chip Cookies" just because you don't want to eat gluten. But it's sometimes easier to tell them that you're on a diet than you're avoiding a staple that made our country great. You tell people you're on a diet, they tell you they sympathize and offer you some chewing gum and 45 minutes of dieting advice. You tell people you're a glutard, they look at you like you've just told them you're celibate, or that you never decided to get your drivers' license, or that you don't drink because you "just don't like the taste of alcohol."

These cookies hit a home run on two fronts. They are ridiculously easy to put together, which means you can make them during a commercial break and be eating them by the time the next sitcom comes on. You probably have everything in your pantry right now anyway. And although they are gluten free, you can pass these off as regular cookies at any function. They're definitely chewier, but the peanut butter and chocolate tastes will not disappoint. Dunk them in some milk, or almond milk if you're also lactose intollerant. They're winners, even if your digestive system is not.

 

Gluten Free Chocolate Chip Peanut Butter Cookies

Makes 12 Cookies

1/2 cup peanut butter
1/2 cup light brown sugar
1 egg
1/2 cup chocolate chips

Preheat oven to 350 degrees.

Combine peanut butter, brown sugar, and egg in a bowl and mix well. Add in chocolate chips. Spoon cookie dough onto an ungreased baking sheet and bake at 350 degrees for 17-20 minutes, depending on your oven settings. Enjoy.
