Recipe: Strawberry Bruschetta

Makes 24 slices

1 cup strawberries, diced
1 tablespoon sugar
1 baguette, sliced
4 ounces goat cheese
Olive oil
Balsamic vinegar
10 fresh basil leaves, sliced
Salt and pepper


Combine the strawberries and sugar in a small bowl and let it chill in the fridge for at least 30 minutes to help the berries release their juice.

Preheat the oven to 350 degrees. Arrange the baguette slices in a layer on a baking sheet and toast until slightly crisp.

Spread each slice with a thin layer of goat cheese. Top with a spoonful of strawberries, and drizzle lightly with olive oil and vinegar. Top each slice with basil and freshly cracked black pepper and salt, to taste.
