Friday Night Cocktails: Raspberry Mojito

1 ounce simple syrup (recipe below)
2 ounces light rum
8-10 fresh mint leaves
6-8 fresh raspberries
½ ounce fresh lime juice
For Simple Syrup
¾ cup white sugar
¾ cup water
Make the simple syrup by bringing the sugar and water to a boil in a small saucepan on the stove.
Combine the mint, raspberries, and lime juice in a bowl. Using a pestle, if you have one, or another kitchen tool, crush the mint and raspberries, muddling it to release the flavors.
Combine the syrup, mint mixture, and rum in a glass filled with ice. Top it off with your preferred amount of soda water, and garnish with fresh mint leaves.
