Crab Gazpacho

6 ripe tomatoes, peeled and chopped
3 green onions, sliced
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or green) seeded and chopped
2 stalks celery, chopped
1 clove garlic, minced
1/4 cup olive oil
2 Tablespoons freshly squeezed lime juice
2 teaspoons sugar
Salt and fresh ground pepper to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice
½ cup lump crab meat

Combine all ingredients except the crab in a large bowl. If you prefer a smoother texture, use an immersion blender to blend to your desired consistency (or pour into a regular blender). However, there’s nothing wrong with leaving lots of vegetable chunks!
Cover and place in the refrigerator to chill for at least an hour. When ready to serve, ladle into bowls and top with crab meat.
