¾ cups all-purpose flour
1 teaspoon baking powder
2 large eggs
½ cup milk
½ teaspoon cayenne pepper
4 cups fresh corn kernels
½ cup red bell pepper, chopped finely
½ cup green bell pepper, chopped finely
2 teaspoons Old Bay (optional, but who in Maryland doesn't like Old Bay?)
Canola oil, for frying
Combine the flour and baking powder, then mix in the eggs, milk, cayenne pepper, and Old Bay. Fold in the corn.
Heat an inch of canola oil in a large skillet. Form the batter into your preferred size of fritter, and then drop it into the oil and cook until it's golden brown. Flip the fritter over and cook until the other side is golden brown. Remove it to a plate lined with paper towels to drain.
