Makes 2 dozen cookies

1/3 cup butter, softened
1/2 cup packed brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup dried cranberries
1/2 cup white baking chips

Preheat the oven to 375 degrees.

Beat the butter, brown sugar, and granulated sugar for two minutes in a large bowl. Beat in the egg and vanilla. In a small bowl, combine the flour, salt, and baking soda. Add the dry ingredients to the butter mixture a half-cup at a time, mixing well between each addition. Fold in the cranberries and white baking chips.

Line baking sheets with parchment paper. Drop dough by the heaping tablespoonfuls about 2 inches apart. Bake for eight to 10 minutes, or until the cookies are golden-brown. Cool and remove to wire racks.
