Cornmeal Waffles with Sunny-Side Up Egg and Chives

1 ¾ cups flour
1 ¼ cups yellow cornmeal
1 Tbsp. baking powder
1 tsp. sugar
1 tsp. salt
3 Tbsp. vegetable oil
2 cups milk
6 eggs
1 Tbsp. butter
4 Tbsp. fresh chives, chopped



Preheat your waffle iron. Preheat the oven to 200 degrees.

In a small bowl, combine flour, cornmeal, baking powder, salt and sugar.

In another bowl, whisk together milk, vegetable oil and two eggs.

Make a well in the center of the flour mixture. Pour the egg mixture into the well. Stir to combine.

Pour 1/3 cup of batter onto each waffle section on your waffle maker. Close and cook for 7 minutes until waffles are golden brown and crisp. When finished, place on an oven-safe dish and keep in the oven to warm.

After the waffles have cooked, make your eggs. In a frying pan over medium high heat, melt 1 tablespoon of butter. Add the eggs to the frying pan and turn the heat down to medium. Once the egg white has turned creamy, remove from heat.

Take the waffles out of the oven. Top each waffle with one sunny-side up egg. Top the egg with one tablespoon of freshly chopped chives.

Makes 4 servings.
