3/4 cup sugar
1/3 cup freshly squeeze grapefruit juice
4 Tbsp. unsalted butter, room temperature.
Place a stainless steel bowl over top a saucepan of simmering water. In the bowl, whisk together eggs, sugar and grapefruit juice until blended. Cook, stirring constantly until the mixture thickens, about ten minutes. Remove from heat and pour through a strainer to remove any lumps. Cut the butter into small pieces and whisk into the mixture until butter has melted. Cover immediately and let cool. Mixture will thicken as it cools. This will keep in the refrigerator for a week. Makes approximately 1 1/2 cups curd.
