Sweet and Spicy Tomato Jam

3 1/2 pounds tomatoes, coarsely chopped
1 small white onion, diced
1/2 cup brown sugar
1 1/2 cup granulated sugar
1 tsp. salt
1/4 cup cider vinegar
1/2 cup diced green apple
1 jalapeño, seeded and diced
1 habanero, seeded and diced


Combine all of the ingredients in a large sauce pan over medium high heat. Bring to a boil. Reduce to a simmer and cook for 2 1/2 hours, stirring occasionally, until it reaches a thick consistency. Put into jars for serving.
Makes 3 to 4 cups of jam.
