Mini Veggie Quesadillas

4 small corn tortillas
1 green bell pepper, diced
1 small red onion, diced
1/2 cup refried beans
1/2 cup cheddar cheese
salsa and sour cream for serving


Heat a medium sized pan over medium high and spray with non-stick spray. Lay your corn tortilla on a flat surface. Spread beans on two of the tortillas, Sprinkle bell pepper and red onion evenly on top. Layer on the cheese then place another tortilla on top. Place the quesadilla in the pan and cook until golden, about 3 minutes. Flip and cook until golden on the other side. Serves 2.
