Classic Carbonara

1 pound spaghetti
8 slices bacon, cut 1 inch thick crosswise
3 large eggs
3/4 cup grated Parmesan cheese
1/2 cup half and half


Set a pot of water to boil for the pasta. While that boils, cook bacon in a large skillet over medium heat until crisp, 10 to 12 minutes. Place on a paper-towel lined plate. Add pasta to the boiling water and cook according to package instructions. In a large bowl, whisk the eggs, half and half and Parmesan together and set aside. Drain the pasta. Quickly add it to the egg mixture then add in the bacon. Season with salt and pepper and toss to combine. Serve immediately. Sprinkle with additional Parmesan cheese. Serves 4.
