Hawaiian Coconut Cupcakes

For cake:
1 ¾ cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup coconut milk
½ cup canola oil
2 tablespoons vanilla extract
1 tablespoon white or apple cider vinegar

For icing:
2 limes
2 sticks of butter, softened
¼- 1/2 powdered sugar
4-6 Tbsp. heavy cream


Preheat the oven to 350 degrees. Line your cupcake pan with paper liners. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together coconut milk, oil, vanilla, and vinegar. Pour the milk mixture into the flour mixture and mix to just combine. Overmixing will result in tough cakes. Fill cupcake liners two-thirds of the way with batter. Bake 15 to 18 minutes until baked through. Cool before icing. To prepare icing: Cream your butter in a mixer for about 2 minutes. Add in powdered sugar and juice of two limes. Mix well to combine. Add in heavy cream a tablespoon at a time until the icing reaches the desired consistency. Pipe icing onto cupcakes using a star tip.

Makes approximately 12 cupcakes.
