Pasta A La Vodka

Aug 27, 2013 01:15PM ● By Cate Reynolds

It’s the same thing this time every year. Yes, it is the start of a new school year and sports start up. And it’s that time when maybe you run around like a chicken with no head, stressed and harried from all the rushing. That is the time when super easy, incredibly quick dinners come in handy. Something that is not only flavorful and filling but can be whipped together in no time flat. This pasta a la vodka takes under 30 minutes but is so packed with flavor, you’d think it takes all day.

2 Tbsp. butter
2 Tbsp. tomato paste
4 Tbsp. heavy cream
1/4 cup vodka
4 Cups cooked pasta of your choice

Cook the pasta according to package instructions. While the pasta is cooking, prepare your sauce. Melt the butter in a sauce pan over medium heat. Once it is melted, add the tomato paste. Stir it until it begins to melt into the butter. Add in the heavy cream and stir well until completely incorporated. Add in the vodka and stir well. Once the pasta is finished and drained, add it to the pan with the sauce and toss to coat completely. Serve hot.
