Maple Sweet Potato Stacks

3 sweet potatoes, peeled and sliced into 1/4” thick slices
1/4 cup olive oil
1/4 cup pure maple syrup
Preheat the oven to 375 degrees. Lay sweet potatoes in a single layer on a foil-lined baking sheet. Use a pastry brush and brush all the slices with olive oil. Repeat with the maple syrup. Sprinkle with salt. Bake for 40 to 50 minutes until tender. To serve, pule the potatoes on top of each other in stacks.
