When it comes to vegetables, there really is no better way to prepare them than by roasted. Roasting brings out a ton of flavor. And when tossed with garlic, these roasted potatoes taste even better than you could imagine.

3 lbs. small, white potaotes
1/4 cup olive oil
1 1/2 tsp. salt
1 tsp. black pepper
6 cloves garlic, minced

Preheat the oven to 400 degrees. Cur the potatoes in half, then quarters and place them in a bowl with olive oil, salt, pepper and garlic. Toss to coat. Transfer the potatoes to a foil-lined sheet pan. Bake for 45 minutes, tossing occasionally to ensure they don’t stick. When they start to crisp, remove from the oven. Serve hot.
