Salt and Vinegar Sweet Potatoes

2 sweet potatoes, chopped
2 tsp. olive oil
2 Tbsp. apple cider vinegar
Preheat the oven to 400 degrees. Toss the potatoes with the olive oil and cider vinegar then lay them on a foil-lined baking sheet. Sprinkle them with salt. Roast for 45 minutes until they are tender. Sprinkle with additional salt if necessary.
