Maple Coated Butternut Squash

Nov 05, 2013 02:06PM ● By Cate Reynolds
Butternut squash is a sweet vegetable to begin with. Glaze it with a bit of pure maple syrup and sprinkle it with salt for a sweet and salty pop-able appetizer.

1 butternut squash, peeled, seeded and cut into 1” cubes
2 Tbsp. olive oil
1/4 cup pure maple syrup
sea salt

Preheat oven to 375 degrees. Line a baking sheet with foil. Lay the squash on the baking sheet. Pour the oil on top and toss to coat. Drizzle evenly with maple syrup and sprinkle with salt. Roast in the oven for 45 minutes until the squash is fork tender. Sprinkle with additional salt as necessary.
