Brown Butter Stuffing

Two ingredients make this an incredibly luxurious stuffing: an egg - mixed into the chicken broth - and brown butter.The egg gives it a creamy texture and the brown butter adds a deep element of rich flavor.


2 stalks celery, diced
1 yellow onion, diced
1 tsp. fresh, minced sage
4 cups French bread, cut into thick cubes
1 1/2 cups chicken broth
1 egg
1 Tbsp. plus 5 Tbsp. butter


Preheat oven to 375 degrees. Melt the one tablespoon of butter in a non-stick sauce pan over medium heat. Once melted, add in the celery and onion and cook until softened, about two minutes. Add in the fresh sage and stir. Add in the bread and toss with the onion mixture. In a bowl, whisk together chicken broth and egg. Pour the broth mixture onto the bread and stir well to combine. Transfer the mixture to a 9” x 11” glass baking dish. Add remaining five tablespoons of butter to a small, non-stick sauce pan over medium heat. Allow the butter to brown, about five minutes. There will be golden brown flecks on the bottom of the pan and the butter will be fragrant. Once browned, pour over top of the bread mixture. Cover the dish with aluminum foil and bake for 15 minutes. Remove foil and bake 15 more minutes. Sprinkle with salt and pepper to taste.
