The French have a term, mise en place, which means everything in its place. There is no better time to follow that saying. So many of your sides can be prepped in advance, so long as you stay organized and make sure that you, well, you know. Have everything in its place. Peel, slice and boil carrots in advance then cool them in an ice bath. Toss them in the fridge until you need them. You’ll shave tons of time off your day-off task list.
