Making meringue cookies is really simple, so long as you have a clean mixing bowl. To ensure it is clean, wipe it with a bit of vinegar or lemon juice beforehand. Then, simple whip and pipe. You’ll have a adorable Christmas tree cookies that are lighter than air.

4 large egg whites, room temperature
1/4 tsp. cream of tartar
1 cup sugar
1/2 tsp. vanilla extract
green gel food dye

Preheat oven to 200 degrees. In the bowl of a stand mixer, combine egg whites and cream of tartar. Beat on high until stiff white peaks form. Add in vanilla, then sugar a bit at a time until you have very stiff peaks. Transfer the meringue mixture to a piping bag fitted with a circle tip. On parchment-lined baking sheets, pipe out the meringue. Start at the bottom and pipe upward, making circles. Add sprinkles on top, if you choose. Bake for 1 hour and 15 minutes until meringue is set.

Makes approximately 30 trees.
