Cold Soba Noodle Salad

Cold noodle salads are an excellent choice for lunch. They require very little preparation and leave you free from the constraints of a microwave or oven. This soba noodle salad is chock full of vegetables and Asian flavors that make for an easy and flavorful lunch.

Ingredients

1 package soba noodles
1 cup carrots, peeled and diced
1/2 small head of broccoli, chopped
1/2 green bell pepper, diced
1 Tbsp. sesame oil
1/3 cup soy sauce
1/3 cup cilantro, chopped
3 garlic cloves, minced
2 Tbsp. brown sugar
1 tsp. red pepper flakes

Directions

Cook soba noodles according to package instructions. Drain and rinse with cold water. Place in a large bowl and toss in cilantro, broccoli, pepper and carrots and set aside. In a small bowl, whisk together sesame oil, soy sauce, garlic, brown sugar and red pepper flakes. Pour over noodles and toss to combine. Cover and refrigerate for at least 1 1/2 hours.

To pack, toss into a container with a sturdy lid. Sprinkle with a few sesame seeds before serving.
