Quinoa Cakes with Spinach and Poached Eggs

Comfort food doesn't always have to be heavy, weighing you down. Quinoa is a great comfort food because it is hearty without giving a lot of weight. Top it with a poached egg and some sautéed garlic spinach and you're talking comfort breakfast.

Ingredients

1 cup cooked quinoa
1/2 yellow onion, diced
2 Tbsp. Parmesan cheese
1/2 tsp. salt
1/2 tsp. black pepper
1 egg
3/4 cup Panko breadcrumbs
2 cups baby spinach
1/2 Tbsp. butter
3 cloves garlic
4 eggs

Directions

In a large bowl, combine quinoa, onion, cheese, salt and pepper. Crack egg and stir in, incorporating fully. Add in breadcrumbs and stir until well-combined. Form the mixture into patties (it should make 4 1/2 cup patties). Heat 1 Tbsp. vegetable oil in a sauce pan over medium high heat. Once hot, add the patties, two at a time. Cook about 5 minutes until golden on one side. Flip and cook until golden on the remaining side. Remove to a paper towel-lined plate. Repeat with remaining patties. To cook spinach, melt butter in a sauce pan over medium heat. Once hot, add garlic and sauté until fragrant, 30 seconds. Add in spinach and toss to coat. Sauté for approximately 5 minutes, stirring occasionally. The spinach will wilt and shrink. Once it is completely coated and has wilted, remove to a plate. To assemble, lay a patty on your plate. Top with a heaping spoonful of spinach and a poached egg.
