Lemon Squares

Lemon squares are one of those quintessential desserts that shows up at every party and gathering. We've lightened them a bit here but the flavor is still there in all its bright and citrusy glory.


1/4 cup sugar
3 Tbsp. butter
1 cup white whole wheat flour

For lemon topping:
3 eggs
3/4 cup sugar
2 tsp. lemon zest
juice from 1 lemon
3 Tbsp. white whole wheat flour
1/2 tsp. baking powder
powdered sugar for sprinkling


Preheat oven to 350 degrees. In a bowl, mix sugar, butter and flour. Use your fingers to work in the flour until it is fully combined. Spread into the bottom of an 8 inch square pan. Bake for 15 minutes. Prepare the topping by beating the eggs until slightly foamy. Add sugar, zest, lemon juice, flour and baking powder and stir well until the mixture begins to thicken. Pour over the crust and bake for 20 minutes until set. Cool. Once completely cooled. slice and sprinkle with powdered sugar.

Makes 16 servings.
