Spinach and Artichoke Panini

Paninis and sandwiches are really fun options when it comes to going meatless. Lots of grilled vegetables and spreads are on the table. This panini takes spinach and artichoke hearts and turns them into a cheesy, filling sandwich.


2 slices sourdough bread
1 Tbsp. cream cheese
3 Tbsp. shredded mozzarella cheese
½ cup torn spinach leaves
2 Tbsp. chopped artichoke hearts
2 Tbsp. butter, softened


Heat a panini press according to package instructions. In a bowl, combine cream cheese, mozzarella cheese, spinach and artichoke hearts. Apply 1 tablespoon of butter to each slice of bread. Spread the spinach mixture on to the bread and sandwich together, butter side up. Place the sandwich on the panini press and close, heating until the bread is toasted and the cheese is thoroughly melted.

Serves 1
