Blood Orange Cardamom Syrup

1 blood orange, zested and juiced
10 cardamom pods, slightly crushed
1 cup sugar
1 cup water
2 cups sparkling water
Combine blood orange zest and juice, cardamom pods, sugar and water in a sauce pan. Bring to a boil then reduce and simmer 15 minutes until thickened. Strain through a fine mesh strainer. Pour 2 to 3 Tbsp. syrup into a glass and top with sparkling water.
Makes approximately 1 cup syrup. Can be used in teas, cocktails or with sparkling water.
