Mini Berry Cobblers

Cobbler is sort of expected when you think of berries. Put a whimsical spin on it by making them mini, in adorable individual portions. Top them with some fresh whipped cream and a few additional berries for a pretty garnish.

Ingredients

1 cup raspberries
1 cup blueberries
1 cup blackberries
2/3 cup flour
1/3 cup sugar
4 Tbsp. melted butter
3 eggs, whisked
1/3 cup milk
1 ½ tsp. vanilla

Directions

Preheat oven to 365 degrees. Spray 6 mini pie tins with non-stick spray. Combine berries in a bowl and divide evenly into pie tins. In a bowl, whisk together flour and sugar. Whisk butter, eggs, milk and vanilla. Pour into the flour mixture and stir well to combine. Spoon evenly on top of fruit to cover. Bake 20 minutes until golden. Cool completely. Top with whipped cream and additional berries.
