Corn Fritters

Every farm stand and market has corn on the cob during the summer months. It’s so sweet and crunchy, perfect for the season. Fritters are an ideal choice for a party. Simple to make, tiny enough to be an excellent appetizer but big on delicious flavors.


1 cup all-purpose flour
1 tsp. baking powder
3 ears of corn, kernels cut from the cob
2 eggs, separated
½ cup heavy cream
Salt and pepper
Oil for frying


Whisk flour and baking powder into a bowl and mix in corn. Whisk egg yolks with cream in a small bowl and stir it into the corn mixture. Season with salt and pepper. Beat egg whites with a mixture until stiff peaks form. Gently fold into the corn batter. Pour vegetable oil into a heavy skillet, about 2 inches. Heat to 375 degrees. Drop fritters, about 2 tablespoons at a time, into the oil. Cook until golden brown, 2 to 3 minutes per side. Remove to a paper towel-lined plate.
