Gingerbread Energy Bites

Gingerbread energy bites make a supreme mid-day snack. The best part? No sugar, no fancy fanfare, no gimmicks. Just simple ingredients combined to make a tasty treat that will power you through a long afternoon.

Ingredients

1 ½ cups pitted dates
½ cup walnuts
½ cup almonds
½ tsp. cinnamon
¾ tsp. ginger
¼ tsp. allspice

Directions

Pulse almonds and walnuts in a food processor until fine but not paste-like. Add dates and spices and pulse until it begins to come together. Remove. Use a small cookie scoop to form the mixture into balls. Lay them on a parchment-lined baking sheet and refrigerate for at least 30 minutes.

Makes approximately 15 energy bites
