They are rich and delicious in their own right. It seemed only natural to pair them up with some fried goat cheese. The breading gives a little crunch and the tangy cheese is a perfect partner for the eggs.

4 ounces goat cheese, sliced into wheels
1 egg
½ cup panko bread crumbs
2 eggs
Oil for frying

Heat about ¼ inch of oil in a frying pan. While the oil heats, take the goat cheese and dip it in the egg. Dip the cheese into the breadcrumbs, pressing to coat. Once the oil has heated, place a pot of water on the stove and bring to a boil. Place the goat cheese wheels in the pan, allowing them to brown. Once fully browned and golden, flip. Allow them to brown on the other side them remove to a paper-towel lined plate. Crack the eggs into a small dish. Once the water is boiling, use a spoon and swirl the water into a whirl pool. Place the eggs in the water and swirl. Cover the pot and remove from heat. Cook for 3 minutes. Place two goat cheese rounds on a plate. Use a slotted spoon and remove an egg from the pot, draining it and placing it on top of the cheese. Repeat with the remaining cheese and eggs.
