Pina Colada Smoothie

Smoothies have really taken flight in the past few years, becoming breakfast of choice for some people including yours truly. I adore this pina colada version. A handful of fresh pineapple, a splash of coconut milk and you are set.


1 banana
1 cup fresh pineapple, frozen
¾ cup coconut milk
2 tsp. chia seeds
¾ cup ice
Flaked coconut for topping


Combine banana, pineapple, coconut milk, chia seeds and ice in a blender and blend until smooth. Pour into a glass. Top with coconut.

Serves 1
