Vegetarian Frito Pie

Frito pie is one of those foods that make an appearance when the weather gets cold. A hearty chili is tossed on top of some Fritos, giving it a great crunch perfect for snacking.

Ingredients

1 tsp. olive oil
1 onion, chopped
3 cloves garlic, minced
1 Tbsp. chili powder
1 chipotle pepper in adobo, minced
1 can black beans, drained and rinsed
1 can diced tomatoes
Fritos for serving

Directions

Heat oil in a skillet over medium high. Saute the onion and garlic until tender. Add chili powder, chipotle pepper, beans and tomatoes to the skillet. Stir well to combine. Cover and let simmer for 15 minutes. When ready to serve, layer the Fritos on the plate and top with a hearty spoonful of chili.
