Rhea’s Rundown

Add some pizzazz to your cheese and meat spread with this easy and delightful dip. It’s effortless to make involving only a handful of ingredients and minimal prep work. Simply process feta and a little water and add some fresh herbs. Then top it off with a premium olive oil (I use Family Reserve Escribano Estate from Season’s Olive Oil and Vinegar Taproom; See Kitchen Staple of the Week) and dill sprigs. It’s the perfect crowd-pleaser for holiday entertaining.

Ingredients – Makes 1 ¼ cups
  • 6 ounces feta
  • ½ cup finely chopped fresh flat-leaf parsley
  • ¼ cup finely chopped fresh mint
  • 2 tablespoons finely chopped fresh dill plus torn sprigs
  • Kosher salt
  • Freshly ground black pepper
  • Olive oil

Directions

Blend feta and a splash of water in a food processor. Transfer to a medium bowl and mix in parsley, mint, and chopped dill; season with salt and pepper. Drizzle with oil; top with dill sprigs.
