Steamed Baby Rainbow Carrots with Orange-Dill Butter

Rhea’s Rundown

Make cute, colorful carrots even tastier with butter, dill, orange juice, and orange zest in 30 minutes or less. The recipe calls for dried dill, but I used fresh dill instead and added a little parsley for fun. The recipe notes this dish is best made just before serving.

Ingredients – Serves 6
  • 1 ¼ baby carrots, trimmed, rainbow if possible
  • 4 teaspoon orange juice
  • 1 teaspoon butter, cut into pieces
  • 2 teaspoon fresh orange zest
  • 1 teaspoon dried dill

Directions

1. Place trimmed baby carrots in steamer basket fitted in a large pot; steam over simmering waters 7 to 9 minutes, or until just tender. Transfer carrots to large bowl, and toss with orange juice, butter, orange zest, and dill; season with salt and pepper, if desired, and serve.
