As January and February roll by, the holidays are long over and resolutions have been in favor. However, “watching your diet” may not be “in the cards” if you intend to visit Ports of Call, located in the newly renovated Doubletree Hotel in Annapolis .

Renovations on the hotel formerly occupied by Radisson and Holiday Inn ended in August '06 and the reopening as Doubletree took place in September '06. The location is beautiful but we focused on the restaurant itself. We felt very comfortable right away. A natural fit, the decorative theme is sailing, with etched sailboats on glass partitions, fly-fishing rods, a big blue marlin, and pictures of boathouses hanging on the walls. A perfect mix of comfortable booths in the atrium and a few tables and chairs in a cherry or mahogany wood tone (continued in the U -shaped bar and coffer ceilings) brings an agreeable feel. Every tabletop has maps of different nautical ports as the background.

On this night, Kirsten was our waitress. She took good care of us. The menu is well designed and offers a few selections from each of the following locales: Key West, Charleston , San Francisco , Boston , and, of course, our Chesapeake Bay —and also a Captain's Grill corner with prime steaks.

We started by sharing a St. Michaels blue crab dip: a signature recipe, very tasty, a little rich in cream cheese but well balanced with a mirepoix (trio of minced vegetables consisting of onions, carrots, and celery). The appetizer was well presented and accompanied by toasted bread and an abundance of fresh fruits.

Gilles had to try the award-winning vegetable crab soup and was pleasantly surprised. Although perhaps a touch heavy with plum tomatoes, the soup was absolutely wonderful, with delicious flavor in the broth and generously garnished with lump crab.

Kathy chose the Eastern Shore stuffed shrimp, baked with imperial crab: a delightful entrée. The shrimp were perfectly cooked and the imperial was nicely balanced with spices. The menu offers four choices of seafaring sides. Kathy opted for a broiled lobster tail and drawn butter with her entrée. This, again, was prepared just right.

Gilles's choice was the Boston baked scrod (young cod fillets) with a Parker house bread topping. It was delicious and tasty, a very moist piece of fish cooked just right.

We were very impressed, not only with the overall quality of the dinner but also specifically with the preparation of the side vegetables and other accompaniments: our broccoli florets were actually florets and absolutely perfectly cooked and seasoned. The roasted red potatoes were fresh and plump and seemed to come right out of the oven.

The portions were very generous, the hot dish hot, and the cold dish cold, and the presentation was simple and attractive.

Although we were amply full, we still ordered desserts. Kathy picked the Carolina bread pudding with home churned vanilla ice cream and Gilles was treated to a true Key Lime pie, topped with a light meringue. Both were delicious.

Chef Nicolai Vuxinic, a native of Croatia , is the restaurant's head chef. He sat down with us and we enjoyed a nice conversation. He graduated from an apprenticeship in 1994 at a country club in Colorado and worked in Boston for the Odyssey and Spirit cruise ships before coming down last August to Baltimore , where his wife is a surgeon. Rae Brown, the restaurant supervisor, paid us a visit as well to ensure that we had a good experience.

The wine list is extensive and, surprisingly, every wine is available by the glass.

The entire operation is supervised by Steve Book, the general manager, and also overseen by the executive chef, Charles McKnew, an 18-year veteran in the building, having remained through each changeover. Ports of Call can also host banquets up to about 300 people, under chef Jamie Evans.

The “tip of my toque” to Chef Nicolai Vuxinic for an outstanding dining experience

Gilles Syglowski is a chef, culinary instructor, and food service consultant. He is a graduate of the Lycee d'Enseignement Professional Hotelier in Metz , France . He and his wife, Kathy, a member of the International Wine Society, have more than 50 years' experience in the restaurant industry.

St. Patricks Day:
The Holy Toast!

Every year on March 17, people of all ethnicities flock to Irish bars in Boston, New York, Chicago, Savannah, and, of course, Annapolis, to raise a glass (or several) to the patron saint of Ireland: St. Patrick. The Irish have been celebrating St. Patrick's Day for thousands of years, and are still going strong. March 17 is “Our biggest night—bigger than New Year's Eve,” said Justin Carr, bartender at Castlebay in Annapolis . But why all the hoopla? How did this humble religious holiday become the biggest drinking day of the year?

Who was St. Patrick?

Let's start with St. Patrick. Born British at the end of the fourth century, St. Patrick was kidnapped by Irish raiders at 16, and spent more than six years in captivity in Ireland , according to historians. During his captive years, he lived a solitary life, working as a shepherd, and turned to religion for solace, stregthening his Christian values. It is believed that St. Patrick dreamed that God told him to get out of Ireland , prompting his escape. He walked almost 200 miles to the Irish coast, and made it back to Britain . Legend says that another dream compelled him back to Ireland as a missionary, where he ministered to Christians already living in Ireland . Many believe that St. Patrick introduced Christianity to Ireland , but the mission story contradicts this idea.

Reducing the indigenous resistance to Christian beliefs, St. Patrick incorporated pagan symbols into his converts' practice of Christianity. He took the pagan ritual of honoring gods with fire, using bonfires to celebrate Easter. He also took a sun – a powerful pagan symbol – and superimposed it on the Christian cross, forming what is now known as the Celtic cross. Legend has it that St. Patrick banished all the snakes from Ireland , but Ireland never hosted any snakes—they most likely symbolize the banishing pagan beliefs from Ireland .

Corned beef and cabbage

March 17 is the day St. Patrick died. Irish tradition dictated a religious observance in the morning and dancing, drinking and a feast in the afternoon. St. Patrick's Day falls during Lent, but the Irish were exempted from the prohibition against eating meat, just for the day—thus, they celebrated by dining on Irish bacon and cabbage. Corned beef didn't enter the picture until the turn of the 20th century. Irish immigrants living in New York 's Lower East Side —a heavily Jewish neighborhood—used the traditionally Jewish corned beef as a cheaper alternative to bacon, and a new tradition was born.

Hoisting a Pint

From the beginning, drinking has marked the celebration on St. Patrick's Day, and has become the activity that many people associate with the holiday. Myself, my fiancé, Matt Fisher, and a small cadre of friends including locals Pat Cary and Bev Bishop visited local watering holes to meet with the barkeeps and to sample the best brews Annapolis has to offer. We enjoyed the traditional Guinness associated with Ireland , with its mild, smooth, malty taste and thick texture, but also discovered several other Irish beers worth sampling. Our tasters, whose preferences run from lagers to stouts, offered their recommendations. For lager fans, Galway Bay 's Irish Gold Light Ale, brewed specially for Galway Bay by Old Dominion, offered a light-textured, flavorful, citrusy, low-calorie-in-disguise option. “I could drink this all night,” said taster Pat Cary.

Three Nuns, custom-brewed by Vincent Quinlan, owner of Castlebay in Annapolis , got rave reviews. The golden brew coats your palate, is hoppy but refreshing and good with food. “I would like this with a sandwich,” taster Bev Bishop said of the Three Nuns brew.

Galway Bay 's Irish Red Ale had universal appeal. The dark amber beer had a smooth taste, with some caramel and a smoky, woodsy flavor with a light aftertaste. Bishop, who is a lager drinker, raved about the Red Ale.

If you like cider, Magners proved to be a great Irish cider. Leaving bitterness behind, Magners was smooth all the way. Cary noticed its effervescence throughout and noted the “nice apple flavor.”

Smithwicks won raves as well. Smithwicks is a dark amber Irish Ale, with a smooth, smoky flavor and an equal balance of hops and malt flavors. Bartender Carr told us that Smithwicks tastes better bottled than on tap – it's more authentic, he said.

Carr also offered his advice to would-be celebrants: “Go slow and stay away from the green stuff. It's a long day and there's alcohol everywhere.” And if you're worried about hangovers, Carr recommends Guinness. “It's (less) alcohol, but the nitrogen releases quicker into your blood. And once you get used to it; it's not that filling.”

Lucky for the Gambrillian and Croftonite clans, there's a new pub in town, the Irish Channel, offering three-star fare in a relaxed atmosphere that's equal parts Irish pub, sports bar, and cozy (almost romantic) dining. Located in the new Hopkins Business Center in Gambrills, the restaurant opened in March of 2006 under the guidance of brothers Tom and Garry Stack, who own the restaurant's big brother, also the Irish Channel, in trendy Penn Quarter in Washington , D.C.

One side of the restaurant is outfitted with dark wood booths and trim, balanced with green carpeting and wood flooring—sounds somewhat dark, but an airy abundance of light pours in through the large windows all along the perimeter. On the other side, a spacious dining area with tables that seat four is also home to a small stage area for nightly live music. The bar area is tucked in the rear of the restaurant, with taps aplenty for popular domestic, Irish, and other import brews. A large fireplace and mantel surrounded by leather lounge chairs and a couch reside in the middle of the two dining areas and bar, tying together the entire decor. On a late Friday afternoon, my coworker Rene McMahon and I sat at one of the wood booths next to the fireplace, which had the very inviting feeling of a cozy tavern.

Though our hearts longed for cold draft beer, we opted for lighter refreshment: fresh iced tea. The menu is large and has something for everyone: appetizers, from Irish smoked salmon to buffalo wings ($6.95 - 10.95); traditional Irish soups ($3.95 cup); burgers and sandwiches stuffed with every ingredient under the sun ($7.95 - 10.95); unique salads ($4.75 - 12.95); pasta dishes that, surprise, would make Italy proud ($12.95 - 16.95); and mouthwatering entrees ($11.95 - 21.95), from the unexpected (Cashel chicken stuffed with blue cheese and andouille sausage) to the traditional (corned beef and cabbage—a proven winner).

Comfort food is what I sought, and so a shepherd's pie was in order, with seasoned ground beef combined with carrots and peas in hearty gravy and topped with mashed potatoes. The dish was fabulous and filling. Rene chose the London broil salad, with thinly sliced London broil served over mixed lettuce, tomatoes, and cucumber and accompanied by thick-battered onion rings. The meat looked and tasted amazing. We bypassed dessert (seven choices, each $5.95) despite the tempting items. Needless to say, we left a little top-heavy but very satisfied.

This St. Patrick's Day, the Irish Channel plans to celebrate with a large tent party in the parking lot, live music, and—for early birds—a kegs 'n' eggs special. If you're in the mood to celebrate life in general any night of the week, the restaurant also features live music Tuesday through Saturday evenings—and Monday is Quiz Night, a fun reason to bring along your chums. The late afternoon crowd was relaxed and a little sparse on our visit, but after 5 p.m. the restaurant tends to fill. And if the live music is whipping the crowd into frenzied fun, then a few of the dining tables are cleared away for dancing space. Open 3:30 p.m.–1:30 a.m. Monday through Wednesday; 11 a.m.–1:30 a.m. Thursday through Saturday.
