Having spent years researching the elements of an extraordinary dining experience, the restaurateurs of Monte Restaurant Development Group have crafted from their discoveries the common thread uniting all their establishments: a passion for excellent food, superior service, and genuine value. Their common goal, according to the successful trio of Gennaro Dimeo, Lino Dimeo, and Gennaro DiBenedetto, is “making people happy.” With the addition of Four Seasons Grille to their portfolio they are doing just that.
Located in the heart of the Village at Waugh Chapel, this American-Mediterranean–style restaurant has quickly achieved popularity.
The decor takes inspiration from the name, Four Seasons. The color palette incorporates the colors of nature, from the warm gold tones of summer on the walls to the cool blue shades of winter in the curved, carved-out ceiling. And the attention to detail is overwhelming. The soft leather banquettes envelop you as you slip into the coppery-colored booth. The open kitchen, strategically blinded by a wall, lets you peek at the action and sets a modern tone.
This little family (the two of us with daughter Katelyn) took advantage of a slow afternoon to visit the establishment. We were already quite familiar with the talents of Monte's corporate executive chef, Gennaro DiBenedetto, so the adventure in the new American-Mediterranean style sounded exciting. The menu proved quite extensive and offered a taste for every palate as well as signature dishes. We tried to focus on strong flavors and more traditional items.
The Prince Edward Island mussels ($9.50), simmered in a seafood bisque sauce, accentuated with plum tomato concassée, and served with toasted garlic crostini, were absolutely delicious. Shrimp coconut skewers ($9) saw butterflied shrimp lightly dipped in batter, fried golden brown, and served with orange marmalade. They were a hit for Kathy, not only for their unusual tenderness, but also for the attractive presentation. The cream of crab soup ($6.80) presented a unique characteristic: pureed crabmeat versus lump, which added a scrumptious texture and flavor—it was delicious and silky.
For an entrée, angel-hair pasta Athena ($12) was Katelyn's selection. Finished with arugula, oven-roasted tomatoes, and pine nuts in a sauce of roasted garlic, olive oil, and wine, then topped with shaved Parmesan and drizzled with oven-roasted tomato coulis, the pasta was perfectly enhanced with strong flavors, aromas, and color.
Fettuccini Mediterraneo ($20) starred succulent shrimp in a delicate, creamy seafood bisque sauce with roasted baby tomatoes, tossed with fettuccini noodles, and topped with sweet tender crabmeat. The dish had Kathy humming praise.
The veal with truffles and wild mushrooms ($19) was another acutely flavorful dish, consisting of tender veal scaloppini sautéed with wild mushrooms and a black truffle reduction, served with the chef's selection of vegetable and a potato. By far, it was Gilles' favorite of the dishes sampled—simply excellent.
The delicious desserts ($7 each) that ended our dinner on a high note were raspberry cheesecake; peanut butter cheesecake; and Torta della nonna, with flaky layers of crust surrounding delicate lemon pastry cream, with almonds and pine nuts, and dusted with powered sugar.
We found the wine list very well balanced selection- and price-wise. Not overwhelming, it blended nicely with the menu.
There has been speculation that Mediterranean cuisine leads to healthier and longer living. Such speculation seems to overlook what a large number of varied cultures and styles that cuisine includes, but it suggests the ingredients are the keys. Among the vast list of ingredients, seafood, lamb, goat and goat cheeses, sun-ripened fresh vegetables, and specialty breads are abundant throughout the entire region; olive oil seems to tie them all together. Four Seasons Grille has superbly made use of such ingredients, crafting hearty and delicious meals that toast the Mediterranean but also play to our American palates.
Four Seasons Grille also offers an attractive Sunday brunch and happy hour specials. This summer be sure to look for Monte's newest venture, Pomodoro Grille, slated to open in Bowie . Coming from a family of successful restaurants, including the wonderful Four Seasons Grille, it is sure to find its own success . . . and soon.

When you have found a wine you really love and it's time to enjoy it, have you ever stopped to wonder what to serve it in? Your wine glass is more than just a place to pour your wine. It can significantly affect the taste of your wine. Picking the correct type of wine glasses to own is one of the most important decisions a wine lover can make.
What are the basic requirements?
At a very minimum, your wine glass should be tulip shaped with a bowl that tapers toward the top. This helps keep the aromas in the glass and enhances your tasting enjoyment. The bowl should be broad enough to allow for adequate swirling, which kicks up the wine's aromas and vaporizes the alcohol, making it accessible for smelling. This is important since smelling your wine is 80 percent of the tasting process.
I recommend purchasing real crystal—more for functional reasons than for beauty. Crystal has a rough surface that helps agitate the wine when you swirl it, allowing you to better smell and enjoy the wine (it also increases the production of bubbles in Champagne ). The thinner the glass, especially the rim, the better the wine will taste. Less glass, more wine—it just makes sense! Try to find a glass that is at least 8–10 inches tall and made of clear glass with no etching or designs. Colored or decorative glasses affect the full enjoyment of the wine's true color.
Why have glasses of different sizes?
The smaller glasses used for white wines allow their more delicate aromas to concentrate in the glass. This concentration ensures we can smell the wines better, and, as mentioned previously, smelling is the workhorse of tasting. Conversely, larger glasses with broader bowls provide red wine greater surface area for swirling, allowing the oxygen to unlock its fabulous flavors. The bubbles found in Champagne and sparkling wines benefit from the long, slender flute shape.
In the 1960s Professor Claus Riedel first introduced his varietal-specific glasses after he noticed that the aromas, flavors, and balance of different varietals (aka a specific type of grape—ex: pinot noir) were enhanced by the shape of the wine glass. There are differences in the taste but they are subtle. If you don't have the budget (or cabinet space) for a multitude of different glasses, no need to worry . . . just be sure what you buy is of good quality.
What's up with stemless glasses?
One of the new trends in wine glasses is the stemless glass. The bowls of these glasses have the same shape as those of regular wine glasses but the glasses have no stem. In addition to looking great, these stemless glasses can save you lots of money. Wine glasses often break at the stem. These glasses will last longer. Also, unlike other crystal wine glasses, which should be hand washed, these glasses can be put in the dishwasher (good news in my house!). There are a few downsides. As you hold the glass your body heat will warm the wine (more critical if it's white wine). These types of glasses also make it more difficult to fully appreciate the beautiful colors of the wine. I think these are great glasses for casual parties, boating, or when no one is taking wine—or anything else, for that matter—too seriously!
What's the bottom line?
As far as I am concerned, if you buy a quality set of crystal glasses each for red, white, and sparkling wines, you are totally prepared for almost any wine-drinking occasion. If you are truly on a budget, buy good-quality, all-purpose crystal wine glasses with the tulip shape, approximately 8–10 inches tall. Some of the better brands include Riedel, Spieglau, and Schott-Zwiesel. Of course, each glass company makes several different lines, covering a wide range of prices, from affordable to about as high as anyone might want to spend!
Make it hot, hot, hot!
Wondering how to clean your new wine glasses? Use very hot water! Unless you like the bouquet of Palmolive try not to use it, or, if you must . . . use it very sparingly. Using too much soap leaves a residue that affects the taste of the next glass of wine you drink. After washing them, place the glasses upside down on a linen towel to dry. For spotless glasses that even Martha Stewart would be impressed with try this trick: hold glasses over a steaming pot of water and then polish with your best linen tea towels.

A marriage of Old World aesthetics and contemporary design, the decor of the Italian Market & Restaurant is inviting, ushering you in to enjoy simply prepared, delicious Italian meals.
Occupying a spacious building on Defense Highway (aka Rt. 450), the eatery offers both dine-in and carryout options—it even has a drive-through pickup window. When you step inside, you'll immediately notice the large gazebo, centrally located, with Roman-styled marble columns and centerpiece water fountain. Dining tables in and around the gazebo make it easy to imagine dining al fresco in a piazza. Circling this main dining area are the open kitchen and ordering station, a refreshments and condiment station, the deli case where you can purchase imported meats and cheeses, and the other star of the market—the specialty wine shop, featuring more than 600 Italian wines for purchase. There is also a second dining area, near the front façade of the building. It is sunlit by the many windows along its perimeter. A flat-screen television on the wall plays footage of charming Italian cities, from Venice to Florence —like a living landscape portrait.
After placing our orders, we settled into the well-lit front dining area and enjoyed the hustle of the kitchen, the elegance of the central fountain and marble gazebo, and the impressive shelves of reds and whites in the wine shop—all while we waited for our orders to be delivered to our table.
Here it's easy to lose yourself in the good-natured spirit of dining Italian, whether you're with family and friends or at a power lunch. On this visit during lunch hour, we noticed a family of six, several couples, and a few suits enjoying varied selections from the extensive menu. From filling staples such as strombolis, calzones, and pizza (of which there are several styles including New York, white gourmet, and Sicilian) to a wide range of antipasti, salads, and more “refined” seafood, pasta, chicken, and veal dishes, you'll find palate pleasers that won't break the bank. And yes, the restaurant has a “bambinos'” (kids') menu as well.
We enjoyed the ham and cheese calzone ($6.45), with ham, ricotta, and mozzarella cheeses stuffed inside pillowy dough, then baked until crisp on the outside and melted on the inside. It was hefty, about half the size of a large plate, and very filling. For lighter fare, we tried the fettuccini Mediterraneo ($16.95), which put the spotlight on fresh shrimp, crabmeat, and tender scallops, served atop a medium-sized dish of fettuccini in a light butter and cream sauce—it was sublime. Entrees are served with delicious garlic bread to boot, and all can be washed down with kid-friendly libations such as soda and lemonade ($2.05) or, for the adults, domestic or import beers ($2.95–3.95) and wine by the glass ($4.25) or bottle ($14.45).
If you're pondering whether you have room for dessert after a hearty lunch or dinner, a quick peek into the gelato case should push you over the top and into sweet bliss. With twenty-four luscious flavors to choose from, as well as cheesecake, tiramisu, and cannolis, the Italian Market & Restaurant has dessert covered.
When you visit, take note of the daily special board, which features eclectic and fresh concoctions. Mondays are pasta nights, featuring $3.99 pasta entrees when you purchase one at full price, and Tuesdays are pizza nights, featuring $3.99 cheese pizzas when, you guessed it, you purchase one pizza at regular price (both specials for carryout customers only). And if your party or special occasion needs catering, the Italian Market & Restaurant can take care of you.
This new-found establishment pleased us on our first visit and, with a second location in Gambrills ( 2404 Brandermill Blvd. ), the Italian Market & Restaurant is poised to please hungry patrons countywide, again and again. Open Monday–Thursday 11 a.m.–10 p.m., Friday–Saturday 11 a.m.–11 p.m., and Sunday noon–9 p.m.

What's the Dish?

Ken Chase has a picture of himself at age 8, making chocolate pudding. A chocolate-streaked grin, a spoon held up in victory—it was the beginning of a culinary career. Chase grew up “all over the world,” and his experiences living (and learning about food) in places like Japan and San Francisco shaped his palate and his creative outlook on food. After all that globe-trotting, he landed in the world's sailing capital, much to the delight of readers who voted his Main Street restaurant, aqua terra, onto What's Up? Annapolis 's Best of Annapolis list in 2006.
The self-taught chef and owner opened the restaurant with his ex-wife and former business partner 7 years ago. In Annapolis , Chase saw a great town with a window for diversification in the restaurant scene. “At the time, there wasn't really anyone else doing the sort cuisine that I wanted to do.” Aqua terra helped to establish a niche in downtown Annapolis that influenced the recent “uptown” or the inner West Street , dining scene. Chase is happy to see fellow restaurateurs open around him. “It's good to see some growth. Everyone has their own niche.”
The restaurant has always featured the best from the sea (aqua) and the land (terra), fusing flavors and techniques from both Europe and Asia . Fusion cuisine combines elements of various culinary traditions while not fitting specifically into any of them. The term generally refers to the innovations in many contemporary restaurant cuisines since the 1970s . Chase likens fusion cuisine to jazz, saying, “You start with a basic dish and you tweak it a little bit at a time, drawing on flavors from different world cuisines.”
Given his upbringing over several continents, it's no surprise that his restaurant's menu features flavors and techniques from around the globe. Examples of fusion from the aqua terra menu include tempura artichoke hearts (the Asian tempura batter technique with a Mediterranean vegetable) and the sesame seared tuna atop lemongrass risotto, finished with a red-onion marmalade caramel soy glaze (the Asian herb lemongrass and French-style onion marmalade or confit ).
Chase is now developing dishes that he's calling “country fusion,” and while he's reluctant to divulge details just yet, he calls them comforting dishes that make the most of ingredients of the season but aren't necessarily as heavy as foods that often get the “comfort” moniker: macaroni and cheese, meatloaf, bread pudding. The sautéed grouper that Chase prepared for Dish is rich and comforting in flavor (a little cream goes a long way), but the seafood and ultra-healthy greens lighten the dish considerably, both in calories and in texture . A multicultural influence is also present, with mirin (a wine made from whole-grain sweet rice) lending a Japanese touch to a classic Western preparation.
This dish appears occasionally on the listing of specials at aqua terra and may eventually make it onto the regular menu. Until then, you can get a taste for yourself at home. While Chase steams fresh artichokes for his dish, you may prefer using jarred artichoke bottoms. Other substitutions that you could make here are wild striped bass for the grouper or sautéed arugula for the escarole. It's a dish with lots of impact in the flavor and presentation departments that doesn't require spending all day in the kitchen.
To try out the real deal, visit aqua terra. In the cooler months the restaurant is open for dinner daily; in the summer lunch is available as well. You might even catch a glimpse of the world traveler—he's staying put for now, with a successful restaurant and a young son who'll need help with his first chocolate pudding.
Sautéed grouper with garlic crabmeat over grilled escarole with leek butter sauce
Fish and crabmeat topping:
4 5-ounce fresh grouper fillets
flour
1 jar artichoke bottoms
juice from 1 lemon
salt
olive oil
1/2 pound jumbo lump crabmeat
3/4 cup heavy cream
1 minced garlic clove
1 tablespoon white wine
1 tablespoon minced chives
1 tablespoon julienned red bell pepper
Preheat oven to 375°F. Heat 1 tablespoon olive oil in an ovenproof sauté pan or skillet on medium-high heat. Dust grouper with flour and pinch of salt. Cook 3 minutes on each side. Move to hot oven for 10 minutes.
Heat artichokes in medium nonreactive saucepan for about 5 minutes, until hot. In a small saucepan, heat cream and wine and reduce by half. Add crabmeat, garlic, peppers, and chives and simmer for 5 minutes. Pull from heat and let stand.
White-wine leek butter:
1/4 cup mirin (can substitute white wine)
2 tablespoons butter
juice of 1 lemon
pinch of salt
3 ounces chopped leeks
1/2 cup heavy cream
Combine all ingredients in a saucepan over medium-high heat and stir constantly for 5 minutes, then simmer on low heat for 10 minutes.
Grilled escarole:
1 head of escarole
olive oil for grilling
Rub twelve leaves of escarole with olive oil. Place them on a hot grill or fry pan for 30 seconds on each side (do this step right before you serve the dish). Divide escarole evenly among four warm plates. Place a fish filet on each bed of escarole. Top with crabmeat topping and white-wine leek butter.

The Wet Dog Café is a cozy niche eatery that recently opened its doors for its seventh summer season. Tucked in the bustling Port Annapolis Marina, located near the end of Bembe Beach Road (off Edgewood Road ) in Annapolis , the café serves yummy breakfast and lunch fare to the locals.
Though it's a small trick to find the café, once you do the rewards are bountiful: hot breakfast items, signature sandwiches that seem to stack a mile high (yes, they really are a mouthful), and a fun atmosphere where you can play a board game over lunch while waterfront views of Back Creek place summer relaxation front and center. Dine indoors or out, and by the time you've finished a delicious meal in the company of boaters and little swimmers (there's a private pool next door), you may not make it back to the office.
Breakfast faves include build-it-yourself omelets, toasted bagel with smoked salmon, French toast, and much more. Lunchtime stars include the Captain John's sandwich, with chicken salad, crisp bacon, and hot pepper–Monterey Jack cheese, and the Back Creek, with roast turkey or roast beef served on a French roll with Boursin cheese. The Wet Dog Café features dozens more sandwich concoctions as well as six specialty salads; quick comfort food items such as hot dogs, quesadillas, and wraps; and a number of items that cater to vegetarians. For sweet endings, cookies and brownies are baked each day. You can wash it all down with select coffee, sodas, juices, or bottled water.
Arriving by boat? Boaters can tie up at C-Dock. The Wet Dog Café is also available to cater your next party. Open late spring through early fall, 8 a.m.–3 p.m. daily, except closed Tuesdays.
